GOAT CHILI
Gluten-Free, dairy-free
Ingredients: black beans, seasoned goat sausage [ground goat meat with apple, onion, garlic, lemon, salt, and spices], smoked tomatoes [just tomatoes, smoked over oak], goat bone broth [slow-cooked broth of goat bones finished with veggies, then skimmed of fat], onion, fennel bulb, butternut, carrot, Anaheim chilies, garlic, smoked guajilla, ancho, and Thai chilies, scallions, turnip, orange juice, cilantro, salt, sugar, gf fish sauce.
To prepare: open can, discard oxygen absorber, fill the can to the top with boiling water (takes about 1 1/2 cups), and put the lid on. Wrap in a jacket for extra insulation if you wish. Wait about 20 minutes. Enjoy!
These meals work great cold-soaked: cover food with cold water a few hours (or up to 8 hours) before eating, then flash in a pan to heat through, or can be eaten cold.
Additional serving suggestions: top with grated cheese, fresh slaw, and sour cream. Serve with corn chips.
