Lamb Paella

Gluten-Free, Dairy-Free

Ingredients:

Arborio rice, lamb sausage [lamb meat ground with onion, garlic, lemon, apple, herbs, spices, salt], braised lamb leg [lamb, smoked chilies, orange juice, garlic, cilantro, salt], smoked tomato, lamb broth [slow rendered bone broth, defatted and finished with onion, carrot, and fennel], pumpkin stock [water simmered with pumpkin pieces, onion, and fennel], sweet peppers, sweet onion, roasted pumpkin [kabocha squash roasted with butter, herbs, and spices], fennel bulb, parsnip, olive oil, salt, smoked paprika, saffron.

To prepare: open can, discard oxygen absorber, fill the can to the top with boiling water (takes about 1 1/2 cups), and put the lid on. Wrap in a jacket for extra insulation if you wish. Wait about 20 minutes. Enjoy!

  • These meals work great cold-soaked: cover food with cold water a few hours (or up to 8 hours) before eating, then flash in a pan to heat through, or can be eaten cold.
